The Lotcha Nom Kouchhay family was started by a couple who originally joined hands to start a small family in May 1984
Then started a series of businesses to earn a living but did not seem to be able to make ends meet. There was some loss, but they still went through life and solved problems.
One day, at the beginning of 1986, on March 1, 1986, they had their first daughter and started a new business, making meat and noodles (sold by the kilo) and having a frying pan for sale.
Life at that time was still hard; sometimes it was almost impossible to find suitable clothes to wear, and some days they could not even find rice in pots. Time passed, and the struggle was still a big change.
After starting a business of making meat, noodles, and fried chili, Moy Lot Cha, a Cambodian of Chinese descent, sold kou chai and lat chha cakes and regularly sold khat chhay with kou chhay. At the beginning of 1987, between March and April, Moy Lotcha had to move to Phnom Penh and wanted to repay the materials and business of Lotcha Nom Kouchhay to both of them. However, he did not teach them how to make Kouchhay cake but still considered them lucky because he allowed them to see how to make kou chai cake from the beginning until the cake was cooked, without any technical details.
When she arrived at the bakery, she (the mother) watched very carefully, from the mixing of the flour to the steaming until the end of the cake.
After learning how to make kou chai cake, when she got home, she faced a difficult situation: the second child, who was just one month old, had to be weaned from morning until afternoon because they did not tell the family they were going to learn how to make cakes. However, this problem was solved when the newborn, 1-month-old, received expensive breast milk upon arrival home, the second child, Mr. Pin Punray. They continued to take turns and oversee daily at the second branch of the Lotcha Nom Kouchhay family.

Of course, no trial is immediately successful; the first failure, the second failure, the third failure, the fourth attempt, many times were unsuccessful. However, as the old saying goes, the struggle to succeed is a continuous effort. Try again, he thought, and reflected on the previous tests, crafted and relearned, learned about snoul meat, and tried again. When it was done, it was steamed and boiled, and suddenly it looked like the meat he wanted. When it was torn, the soft meat inside was fresh in color. She jumped out of the ground to hug her husband without realizing it.
And so, they also started the business of frying noodles from that time, in 1987.
Starting this business continued to grow and develop until they found a real recipe with the same taste and support as today.
